We recommend decanting our wines at least two hours before tasting, and serving them at a temperature of 16-17°C.
The pleasures of tasting a wine are combined with each person's tastes. Received wisdom would have it that a red wine should be consumed with confit of duck, game, or perhaps ceps. This is of course true, but preconceptions can be challenged. A good wine remains a good wine no matter how it is drunk. Innovative combinations, such as wine with chocolate, or wine with fruit, favour the discovery of flavours, aromas and of enjoyment.
